ICAR-SBI Promotes Nutrient-Rich Liquid Jaggery to Entrepreneurs
ICAR-Sugarcane Breeding Institute is promoting liquid jaggery, a preservative-free sweetener, through licensing to entrepreneurs. This initiative targets health-conscious consumers, offering a gradual energy release compared to refined sugar.
ICAR-Sugarcane Breeding Institute (ICAR-SBI) in Coimbatore is actively promoting nutrient-rich liquid jaggery, which is gaining traction in Kerala and Maharashtra. The institute has begun licensing the production technology to entrepreneurs, with a Kerala-based company already offering the product in bottles at ₹100 for 600 grams.
Liquid jaggery, known as 'Kaakvi', is rich in potassium and minerals such as manganese, calcium, and zinc, and enhances the taste of various dishes while potentially improving haemoglobin levels and regulating acidity. The institute charges ₹10,000 for training and technology transfer related to liquid jaggery production. Additionally, ICAR-SBI's facility also produces cane jam, dietary fiber foods, and frozen products, and has tested cane juice powder production through advanced drying methods.
